LA CUCINA DI DONNA CARMELA
The restaurant La Cucina di Donna Carmela is open to in-house guests and those coming from outside, and it offers two daily menus. The maître Rosario Sorbello is on hand to welcome and seat everyone, inviting guests to an experience of haute cuisine and local specialties.
THE CHEF
"What is now a trend in the cuisine of the greatest chefs – eating food that comes exclusively from your own gardens - is a habit here, an uninterrupted reminder of the peasant life where cooking has always been done according to nature".
Piergiorgio Alecci
Piergiorgio Alecci
Chef Piergiorgio Alecci manages the kitchen of our restaurant, masterfully combining ancient Sicilian gastronomic traditions with flair and a sense of modernity. His expertise guarantees a unique and ever-changing experience, enhanced by the ingredients coming from the resort's own garden and selected suppliers.
THE WINE CELLAR
An intimate room with an exposed vault: hundreds of bottles are kept here, many of which are an expression of the Etna and Sicilian personality. The selection includes prestigious, regional, national and international labels.
An unfailing place of honour is reserved for our Nerello Mascalese, with the Pietradolce Archineri Etna DOC, winner of the 3 Bicchieri - Vini d'Italia award of the Gambero Rosso guides, and the Etna Rosso Vigna Barbagali, elected Best Red of the Year 2015.
THE GARDEN A breeding ground of taste and biodiversity
A garden of over 2000 square metres, to be explored on foot or by bicycle (strictly electric!).
An incubator of biodiversity and ingredients that we serve in our restaurant following the rhythm of the seasons.
Here, we produce oil, honey, vegetables, fruit, herbs, jams, and much more by using completely natural techniques, avoiding the wasting of water, and without the use of pesticides or chemical fertilizers.
Using local products is a choice of quality and eco-sustainability.
The citrus grove
Over 30 different organic varieties of oranges, icons of Sicily, are grown in our citrus grove. From their fragrance and authenticity, we produce jams and honey for our guests to enjoy at breakfast.
Oranges, mandarins, limes and grapefruits are also the star ingredients in our cuisine. They give fresh Sicilian notes to dishes and are also used in the cocktails of the Rizo Bar.
